Dessert always has this weird sort of relationship with Japan. Unlike the sugary sweets that we are accustomed to in the west dripping in sugars, jams, and frosting, sweets in Japan tend to use less sugar, are smaller in portion, tend to rely on natural fruit flavors, and overall are just a better suit for the palate after a meal. Now whether or not this has the connection and history, sugar has always been viewed as somewhat of a luxury or that meals tend to be on the salty side in Japan, thus, less sugar is actually more pleasing to the palate or not, we do not know. What we do know is that Japan loves its variations of sweets and look no further than all anime ever to know that sweets are generally favored and looked fondly upon by Japanese people.
Now while we cannot assert that Japanese sweets are different than European sweets, it is very common to see flavors of sweets that you would not normally see. Green tea ice cream, green tea cheesecake, black sugar and kinako flour mochi, mango cheesecake, and more, there are many flavors of sweets that the Japanese find to be pleasing to the palate. While those may all be the case, Sachertorte tends to escape unmodified and unchanged. This European treat is what the princes enjoy in Oushitsu Kyoushi Haine (The Royal Tutor) and today, that is what we will be enjoying on this installment of Anime Recipes. Apparently, you can show your love for the dessert on a T-shirt too!

What You Will Need
Like we said earlier, there are many things that are normally different about Japanese recipes. As you can see here, this entire recipe does not call for one bit of sugar to be mixed into the cake itself. Rather, it is only called for to be a very light topping on top. The other thing that its missing is the apricot jam. It costs an arm and a leg for most fruit jams in Japan, so it makes sense that it is not used often. Now while this recipe will teach you how to make the filling for this time, you are more than welcome to skip this step and slather on some jam. If you do, please send us some too! How to Cook It:
1First things first, take your cake pan, which should be round, and either coat the inside with melted butter, or with cooking spray. The choice is yours but layer it on there. You don’t want the cake breaking!
2In a bowl, combine the sponge cake mix, the cocoa powder, eggs, and milk together beating well with a whisk until the mixture turns light in color. You can feel free to use a mixer as well if you would like.
3Pour your batter into the cake tray and then put it into an oven preheated to 170C (350F) and bake for about 25-30 minutes.
4Use a toothpick or chopstick to confirm that the cake it baked all the way through once the time is up, and if it is, let it cool.
5Once the cake has cooled, cut it horizontally in half so that you end up with 2 flat, round cakes.
6Next up, take 50ml (~ 3 tbsp) of the heavy cream and mix it in a bowl with the instant coffee. Mix it together well until bubbles start to form and then coat the top of the
7bottom layer of cake with this frosting and set aside.
8Next, in a stovetop pan, add in the rest of your heavy cream and the bar of chocolate broken up. On low to medium heat stir until the chocolate has melted and turned
9into a caramel-ish color. If you keep it hot for too long, the chocolate will become rough and gross so be careful to do this quickly.
10Next, on a cooling rack with either a cookie sheet underneath or a line of wax paper/aluminum foil etc., place the bottom layer of cake (the one with the coffee frosting we made) on top. Then place the undecorated layer on top of it.
11Pour the sauce that you just made in step 8 over this cake. (This is why you put something under/around the cake in step 7!) Let it harden for 10 minutes.
12Once the sauce has hardened for 10 minutes, lightly dust with either powdered or granulated sugar.
13Place in the fridge for a few hours so that the cake can harden. Afterward, cut it into the number of slices that you want it to be!
(Note: You are working with an oven, so please be careful.It goes best with some whipped cream, some fruits, and/or a cup of coffee. )
